A unique twist on traditional quiche, these bite-sized Maine lobster and spinach quiche are the perfect breakfast or brunch dish for the American palate.

- 1/2 cups unsalted butter
- 1/2 cup grated cheddar cheese
- 6 ounces lobster meat
- 1 bunch fresh spinach
- 4 large egg
- 1/4 cup heavy cream

- 1 pinch black pepper
