  • 1 can (14.5 oz, drained and chopped) Jackfruit
  • 2 tsp Smoked Paprika
  • 1 tbsp Brown Sugar
  • 2 tbsp Apple Cider Vinegar
  • 1 tbsp Lemon Juice
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • 1 tsp Cumin
  • 1 tsp Chili Powder
  • 1 tsp Salt
  • 1/2 tsp Black Pepper
  • 1 can (14.5 oz) Canned Diced Tomatoes
  • 2 tbsp Olive Oil
  • 1 cup Roasted Sweet Potatoes
  • 1 cup Roasted Zucchini
  • 1 cup Roasted Red Bell Pepper
  • 1 cup Guacamole

👨‍🍳 Instructions

  1. 1

Step 1: Preheat a grill or grill pan to medium-high heat. In a large bowl, whisk together Smoked Paprika, Brown Sugar, Apple Cider Vinegar, Lemon Juice, Garlic Powder, Onion Powder, Cumin, Chili Powder, Salt, and Black Pepper. Add the chopped jackfruit and toss to coat evenly.

  2. 2

Step 2: Grill the marinated jackfruit for 5-7 minutes per side, or until tender and slightly charred.

  3. 3

Step 3: Meanwhile, heat 1 tablespoon of Olive Oil in a large cast-iron skillet over medium heat. Add the diced onions and cook for 3-4 minutes, or until translucent.

  4. 4

Step 4: Add the Roasted Sweet Potatoes, Zucchini, and Red Bell Pepper to the skillet. Cook for an additional 2-3 minutes, stirring occasionally.

  5. 5

Step 5: Warm the canned diced tomatoes in a separate saucepan over low heat.

  6. 6

Step 6: Warm the tortillas by wrapping them in a damp paper towel and microwaving for 20-30 seconds.

  7. 7

Step 7: Assemble the tacos by spooning the grilled jackfruit onto a tortilla, followed by the sautéed vegetables and a dollop of guacamole.

  8. 8

Step 8: Serve immediately and enjoy!

💡 Pro Tips

For an extra crispy texture, press the jackfruit between two plates for a few minutes before grilling. To make the roasted vegetables, toss them with 1 tablespoon of Olive Oil, Salt, and Pepper, and roast in the oven at 400°F (200°C) for 20-25 minutes. To make guacamole, mash 2 ripe avocados with 1 lime, 1/2 teaspoon of Salt, and 1/4 teaspoon of Pepper.
